  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar optional for sweetness
  • ½ teaspoon cayenne pepper adjust to taste

Instructions
 

Preparation:

  • Preheat Your Oven or Smoker: Set the oven to 275°F or smoker to 250°F.
  • Trim the Ribs: Remove the silver membrane from the back of the ribs for better flavor absorption.
  • Apply the Rub: Generously coat the ribs on all sides with the dry rub. Let them rest for at least 1 hour or refrigerate overnight for deeper flavor.

Cooking:

  • Oven Roasting:
  • Place the ribs on a baking sheet lined with foil.
  • Cover with foil and bake for 3 hours.
  • Remove foil, baste with apple cider vinegar, and bake uncovered for another 1-2 hours, or until tender.

Smoking:

  • Place the ribs in a preheated smoker at 250°F.
  • Smoke for 3 hours, then wrap in foil with a bit of vinegar and return to the smoker for another 2 hours.
  • Remove foil, brush with sauce if desired, and smoke for an additional hour to caramelize the surface.

Rest and Serve:

  • Allow ribs to rest for 10 minutes before cutting into portions.
  • Serve with your favorite BBQ sauce, coleslaw, or grilled vegetables.
